Chili, Mileage & Commitment

So I mentioned that I love the cook and have been trying new recipes. Well what I haven't been doing is sharing the recipes. I know right, BOO, bad blogger.

Well I am going to try my best to share the new recipes more often.
One recipe that I recently came upon was Paula Deen's Taco Chili.
This is really yummy and very simple to make! You can either make it in the crockpot or on the stove.


Ingrediants
1 lb ground beef or ground turkey
4 cups of water
1 can tomato sauce
1 can diced tomatos
1 cup red kidney beans
1/2 cup pinto beans
1 envelope buttermilk dressing (in salad dressing aisle)
1 packet taco seasoning
1/3 cup dried onion flakes
1 tablespoon chile powder
1/4 teaspon dried cumin

Directions: Cook ground beef/turkey, then add the rest of the ingrediants.
If you are cooking in the crockpot, cook on high for 4 hours.
If you are cooking on the stove, bring to a boil, then simmer covered for 2 hours

You can add shredded cheese and a dollop of sour cream if you want or eat without.
I also like to serve it over cornbread or with tortilla chips.
Servings: 6-8 depending on your serving size.

On another note, I would like to announce my mileage goal for 2013.

700 MILES

Last year my goal was 600 miles which was exactly 50 miles a month and I surprised myself by flying past my goal with 677.92 miles.

My monthly mileage numbers in 2012 are as follows:

January: 50.43 miles
February: 50.57 miles
March: 58.9 miles
April: 49.44 miles
May: 51.22 miles
June: 55.92 miles
July: 51.96 miles
August: 78.26 miles
September: 87.29 miles
October: 52.25 miles
November: 30.46 miles
December: 61.22 miles

As you can see I didn't always make it to my 50 miles per month but then there were a few months that I flew by the 50. 
I really enjoyed having a goal to reach and it definitely motivated me. I hope it will do the same this year.
So with 700 miles on my plate for 2013 that means at least 58.33 miles per month.
Let's do this!

P.S. I am continuing on with my #plankaday in January. I have recently made it to 3:40 and I hope to continue pushing further!

P.P.S. With the recommendation of my fellow bloggers, Becca and Kimberly, I have committed to a plan of reading the Bible. They both recommended the Youversion Bible app and it has several plans for studying and reading the bible. As of yesterday I started the One Year Plan, which commits you to reading the bible in exactly one year. A few chapters and verses a day for 365 days. I am so excited to be committed to this and know that it will help in my spiritual journey.

  7. Yum, that chili sounds delicious. I've always wanted to read the Bible in a year. I feel like I've read most all of it but never in order. Good luck with your PlankADay!
